Castagna del Monte Amiata PGI: characteristics

Castagna del Monte Amiata PGI is known for the three recognized varieties Marrone, Cecio and Bastarda Rossa.

Its organoleptic characteristics depend on the particular micro-climate and on the cultivated lands originated mostly from volcanic and arenaceous rocks and anyhow with a prevalent or large silicious component.

It is recognizable for its rather large size, not more 80 fruit per kg, and its obovate shape with a slightly pronounced apex. Its outer bur (pericarpus) is reddish with more or less prominent dark grooves, the inner one (episperm), usually easy to remove, ranges from light brown to light ginger. The pale cream-coloured kernel has a sweet and delicate taste.
