
The environmental conditions of the chestnut barrel makers used for the production of «Castagna del Monte Amiata» have to be the traditional ones of this area. The planting layout, the forms of cultivation, the systems of periodical and multiyear pruning, have to be the ones traditionally and generally used in the area of Mount Amiata or, anyhow, suitable to leave unmodified the characteristics of typicality of the fruits. The plant density has to range from a minimum of 60 to a maximum of 150 plants per hectare. Any use of synthesis fertilizers and the resort to phytosanitary products is prohibited during the productive life of the plants. Harvesting can be done manually or with mechanical means that can adequately protect the product integrity and it has to be carried out between the 15th September and the 15th November every year.
Production with the protected geographical indication “Castagna del Monte Amiata” cannot exceed the limit of 12 kg per plant and 18 quintals per hectare. The operations of selection, grading, treatment, preservation and packaging of the fruits have to be performed within the territory of production.
The product is preserved by soaking it in cold water for not more than seven days without adding any additives, or by means of sterilization through immersion in hot water and subsequent immersion in cold water without adding any additives. Freezing is admitted as a preservation method according to the modalities provided for frozen products.
