Its authenticity is guaranteed by some of the most efficient and rigorous production specifications, whose most qualifying points are: the delimitation of the area of historically identified typicality, the highest quantities of product which it is possible to make for every tenth of hectare, the modalities of cultivation and preservation according to tradition, the scrupulous use of the autochthonous seed, the merchandizing of the certified dried grain alone.
