Using the cooking water, rich in beneficial elements, and some of the Sorana beans left from the preparation of recipes like the previous one, it is possible to make one of the cheapest and tastiest dishes of the traditional Tuscan cuisine.
Prepare a light stir-fry, with a spoon of olive oil, a clove of garlic, very little tomato sauce dissolved in a drop of tepid water and a pinch of pepper, add the cooking water and most of the beans passed through the masher, salt and bring to a boil; finally add a flat type of pasta (maltagliati or short but quite thick pasta).
Garnish the dish with the whole beans that are left over, serve steaming hot with a drizzle of good extra-virgin olive oil Toscano PGI.
