
Lardo di Colonnata PGI is made from strips of pork fat, which come from farms located in the territory of the regions Tuscany, Emilia¬-Romagna, Veneto, Friuli-Venezia Giulia, Lombardy, Piedmont, Umbria, Marche, Latium and Molise, corresponding to the adipose layer that covers the back of the occipital region up to the buttocks and that sideways arrives up to the underbelly.
Its shape is variable, indicatively rectangular, not less than 3 cm thick.
On the outside, the lower part preserves the pigskin, while the upper part is covered with the salt used in the curing procedure, darkened by aromatic herbs and spices. The presence of a strip of lean meat gives more savouriness to the product. On the whole, it appears moist, with a homogeneous and soft consistency, white, slightly rosy or vaguely tarnished.
The long maturation period allows the product to gain a fragrant and rich aroma and a delicate and fresh, almost sweet flavour, enhanced by the aromatic herbs and spices used in its processing.
