Pecorino Toscano PDO: characteristics

Cylindrical shape with flat surfaces and slightly rounded sides (height).

The diameter of the moulds ranges from 15 to 22 cm, their height from 7 to 11 cm and their weight from 0.75 to 3.50 kg; the colour of its rind ranges from yellow to deep yellow, eventually depending on its treatments (oiling, sprinkling with ash or tomato); the paste of the cheese is white slightly tending to straw-yellow for the soft type, slightly straw-coloured or straw-coloured for the semi-hard type (mature); its taste is fragrant, strong and characteristic; the fat on the dry substance cannot be less than 40% for the mature cheese and 45% for the soft cheese.
