Pecorino Toscano is recognizable by its mark of origin, impressed on each mould, after they have been checked one by one and after it has been verified that they satisfy completely the production specifications.

The mark is impressed with ink on the soft cheese and iron-branded on the mature cheese. On pre-packaged portions, each single pack is branded. The mark contains the logo representing a stylized P and T, the name Pecorino Toscano PDO and an abbreviation identifying the firm responsible for the production, maturing or portioning of the product that puts it on the market. The label of moulds or packages of Pecorino Romano quotes the name “Pecorino Toscano D.O.P” (Italian acronym for Protected Designation of Origin) or “Pecorino Toscano D.O.P. stagionato” (“mature”), the coloured mark and the European P.D.O. logo.
