The characteristics of Pecorino Toscano PDO originate from the environmental conditions in which sheep are bred, as well as the production processes that, with the aid of the most modern technologies but in observance of a time-honoured tradition, allow the realization of an excellent cheese.
The main element of Pecorino Toscano PDO is obviously milk, produced in the area of origin exclusively from sheep bred on pastures, and processed according to precise regulations. The place of origin of the sheep’s milk and the territory of production and maturation of the cheese includes the region of Tuscany, eleven towns in Latium (Maremma Laziale) and two towns in Umbria.
The rural landscape of Tuscany in its many expressions – historical cities, rural villages, castles and farms – is an environment that preserves the memory of a time-honoured pastoral tradition. The variegated territorial reality that characterizes Tuscany has a particular relation with the production of Pecorino Toscano. Indeed, each area has specific geographical and natural conditions, boasting its own agricultural tradition and culture, which have been instilled and passed on to a typical dairy production.
